FYI, First Watch is not a local chain, it started in CA in 1983...there are restaurants all over the U.S.
A local gem you might want to try for breakfast/brunch over the weekend is The Brass Onion. Out in Prairie Fire at 135th and Nall, it has a great brunch and their dinner menu is great as well. Prime Rib special on the weekends is well worth the trip...

There's a big biscuit near Independence, Mo as well. Also TJs in Grandview & Nelle Belles in Claycomo both equivalent to corner cafe.
