I've always thought the buffet at the Mandalay Bay had the best seafood(crablegs & shrimp).

But .. prepare for a 1+hour wait in line. Still worth it.

The buffet on weekends at the Bellagio
The New York Deli at the Mirage
Picasso at Bellagio
Hot Dogs at the convention center
