Don't get me wrong: great eats at a lot of the places listed, but most of them have become tourist traps and/or gone corporate.

10 years ago (or so), before they were discovered, they were truly "cozy dives"

I know of a number of true dives that only the locals know in a number of cities. PM me if you are interested, but discretion prevents me from sharing them because literally I'm a regular there...

New Orleans has a great pub that is not well know in the lower garden district that has AWESOME AWESOME AWESOME burgers...Down The Hatch
Nola: Bombay club, Maspero, alibi bar, yo mamas, Irenes, Rib room, Oceans, angeli Metairie: come back inn, impastato. St Tammany: Sal & Judys, friends, nuvolari, Purple parrot in hatriesburg MS, Trapani in bay st louis. Too may to list. These are some that I go to.
