The stratosphere has a bungy jump from the top of the tower!

Ditto on Fremont St. That's the old downtown strip in vegas a must see! I'd actually suggest if you do any kind of gambling to try it there. Looser slot play and it just feels more fun.
Not a bad choice on the Lion King, but if there's a Cirque show I'd suggest it'd be the Chris Angel one.

Paven, another freebie if you are on the Strip is the Pirate Show in front of Treasure Island next door to the Mirage. It is outside of the hotel and casino in its own water feature. A fun time.

Also post in the Vegas Co-ed and maybe some locals can give you help with the fun stuff to do away from the tourist trap.

Suggestions:

Blue Man Group (Venetian Hotel) Unquie in its on way, play a mixture of idiosyncratic, often percussive, instruments. Outstanding show and very entertaining.

New new hotel (Aria) at City Center is great for young adults, as well as Planet Hollywood and Hard Rock Hotel.

Phantom of the Opera (Venetian Hotel) Second best show of the Phantom of the Opera next to New York

Ka' by Cirque du Soleil (MGM Grand) Best stage in the world and once you see it you will understand, the stage alone cost $220 Million to build.

I agree with this 100% Redrock is one of my favorite places near Vegas. I would guess I have been there at least 50 times.

Bonnie Springs Ranch is just a few minutes further on after Redrock loop road. It, at least at one time, was a decent place for lunch, but that was several years ago so I don't know the current status. They did have a very good hamburger.

For atmosphere, Bartolotta at the Wynn is excellent food, and there are very romantic tables by the "Lake of Dreams" (try the scallops appetizer- honestly the best in Vegas). Picasso at Bellagio is also very intimate and romantic. The view from Prime at Bellagio is also gorgeous- overlooks the fountains. For lunch, try Mon Ami Gabi at Paris- you can get a nice table on the veranda overlooking the strip and people walking by. The Eiffel Tower at Paris and Alize at the Palms have the BEST souffle in Vegas. Daniel Boulud at the Wynn also has a great view of the Lake of Dreams and great food (try the lox appetizer), but isn't as romantic or intimate. For a special treat, there is always Joel Robuchon at MGM.

For a great view at night, try Mix at the top of THE Hotel. It is free entry before 10pm.

Stay away from the Top of the World restaurant at the Stratosphere- it's awful! As a matter of fact, avoid the Stratosphere altogether if you can- it's gone really downhill. (And Bite, according to my friends, is pretty cheesy.)

My favorite shows in Vegas are Love and Zumanity- both by Cirque de Soleil. For Love, the further back and up you sit (above the middle, but not all the way at the top), the better the experience (be sure to watch the walls). You can also get half-price tickets for some of the other shows and some buffets from the Fashion Show Mall.

A great place for breakfast is the 24-hour cafe at the Wynn, you can get a table by the pool. Another wonderful breakfast option is Bouchon at the Venezia Tower. A great place for lunch besides Mon Ami is The Verandah at the Four Seasons- and sit outside near the pool. Great atmosphere, great food.

There are great couples massage options at the Canyon Ranch Spa at the Venetian. There is one where you go into a cave-like thing and rub creams and scrubs all over each other- can be very erotic

If I read you correctly you will like Pure at Caesars Palace and Trysts at Winn for Night Clubs, there are tons of things to do besides gambling.

New Hotel at Center Center (Aria) along with Planet Hollywood, Hard Rock is based on young adults like you....

WOW! That's a plethora of information, I really appreciate it. Looks like I'll have to go again to be able to fit a lot of that in. I wont be renting a car this trip but possibly the next, I wouldn't mind seeing Hoover Dam either.
Don't get suckered into using the Tram. The stops are all located at the most remote, deepest, hardest to get to points of the hotel complexes they stop at. Grabbing the Tram to get from point A to B will add miles to your walk. Buy day passes for the street trolley instead. Stops all along the strip without adding walking mileage.

Also important, holiday weekend will have you waiting 30-45 minutes minimum for a cab just to leave the airport. The shuttle bus will take just as long as the taxi on a holiday weekend. If there are more than 2 of you, it is actually just as cheap to pre-reserve a town car to get you the hell out there and get the weekend started. Just google limo services in Vegas. Don't get the limo, just the town car. Then get the driver's direct phone for use while you're there, or at least to go back to the airport.

Thank you Harley Guy that is good info no Tram. I am arriving alone and am taking a shuttle to my hotel.
Topshelf Tess- I hear they have a topless pool at Mandalay Bay and that is where I am staying so I will check that out for sure!
Sorry Utanks but I don't have the huevos to bungy jump lol. I do hear the chances for winning are better downtown, my only problem is I am highly allergic to cigarettes and I hear the smoking is heavy. I might have to see if I can rent a oxygen mask and tank lol. I'll figure something out because I really want to go there.
Cris Angel would be awesome to see scaling a building or something crazy like that.

Just a suggestion, but if you end up with unexpected monies (it does happen), consider taking a chopper flight into the Grand Canyon. They'll fly down into the canyon, land on a butte, give you some wine and crackers, and some time to gaze around you. Total time out of your day, about 2 hours, including them picking you up to go to the airport.

Last time I did it, I think the ticket was about $150, but worth every penny. You'll also fly over the Hoover Dam, which you said you were interested in. It's a better way to see the dam since they closed interior tours following 9/11.

Penn and Teller put on a good show everynight at the same casino that has Jubilee.....I can't remember which one, but the signs for both are about the size of a small apartment complex. Also, the buffet at the Paris casino is amazing.
