Jazz is a pretty dam good take on Cajun food, for this part of the country. They have alligator on the menu as a novelty, but everything else is so much better. Live music often, too.

You can get a snoot sandwich in lots of places in St. Louis. Kind of a local specialty.

They are kind of crunchy and chewy.
