Folks,
You should always log out of your GV app when done. Log in when you need it.
Go to the GV webpage https://www.google.com/voice if you wish to change your GV phone number. Go to settings under the gear drop down after you log in to GV on your computer. Then select change or port phone number. If I remember correctly it costs $20 to change, cheaper than a lot of burner phones.
If you don't want to send info to Apple then on the iPhone go to Settings; General; About; Diagnostics & Usage then check Don't Send.
