Frank Zappa - any of his Halloween shows in NYC during the 70's;
Herb Alpert & the Tijuana Brass at Carnegie Hall in '66 with the Dave Brubeck Quartet opening for them;
The Beatles club gigs in Hamburg around '62;
Frank Sinatra at the Sands with the Count Basie Orchestra in the early 60's;
Pat Metheny Group at the Armadillo in Austin, 1978;
Dizzy Gillespie and Charlie Parker at Massey Hall, Toronto 1953;

And if we go way, way back, maybe catch one of Mozart's symphonies or operas.

U2 at Red Rocks
I have a few but a killer one I saw in 1983, San diego sports arena...Ronnie James Dio opened for Aerosmith. Steven Tyler was killer.....opened with "back in the saddle again".....

I'd like to go back in time to be in the room for any of the first concerts where they introduce one of their future masterpieces:

Tchaikovsky
Mozart
Beethoven
I would have loved to have been on the film crew shooting Pink Floyd: Live at Pompeii
Saw AC/DC FIRST US concert - right here in Austin at the Armadillo World HQ. (opened for a Canadian band Moxy - 1977.
I've seen the movie dozens of times, but I'd go see The Band in the Last Waltz concert.
Ooops, found another. The last show for Cream. It was also the first show for Yes.

Slipping slightly sideways, I just found the Hendrix at Woodstock CD. Lordy it's great. Hendrix at his best. I've heard this called Hendrix with an ego free band.

Rolling Stones in the 60s.
Elvis in Memphis. My Dad went to see it when he was young. It would have been interesting to see the King perform, experience the time period, and maybe even see what my Dad was like when he was young.
