Depends on the quality of the meat and bread. If both are good enough, just Dijon mustard.
On a really good dog, average bread, spicy Russian mustard, onions, and a touch of kraut.
On a good or less dog, average bread, any of the two mustards previously mentioned (or American mustard in a pinch), onions, and (sweet relish) or (chilli) or (sweet red peppers and sweet relish), depending on what's available and my mood.
