Why Torchy's why?

Fajitas were never chicken in the beginning. It was grilled skirt steak. Usually pretty tough so the cutting against the grain in small strips made it edible.

I agree but go into a restaurant and ask for fajitas and they'll ask, chicken or beef.

The skirt meat cooked on the grill is carne asada to me, I noticed some places here replace that cut of meat with cheaper cuts and call it fajitas. You can't fool a fat man that knows his food now
Skirt steak is a cheap cut of meat. Very flavorful but tough. That's why it's used in fajitas and carne asada. It's cheap and the thin slicing makes it easier to eat.
