You ask a very valid question. To be honest I'm a lil bit uneasy about trusting someone with any info. I know it's more of a problem on my part. At some point in time I'll either need to give in to some type of screening or scrap the idea of participation.True story:

Since the first Provider was well known and gave me a very good reference, Provider #2 booked me with only the one reference. Then I got both of them to vouch for me on P411. Both are still friends who are now retired, but let me know when they're coming into town to visit.
So, if you do it the right way, you will only have to divulge your personal to one person ... you can't play this game without trusting someone at some point in time.
Don't pay attention to all the paranoid nonsense posted in this thread about Uber and license plates, etc. ... You only have to worry about that if you're sitting in the cheap seats. Ladies at the more professional end of the scale have no interest in surreptitiously collecting your personal info, but they do want to make sure they are protecting themselves.
