Thanks for all the replies, lots of interesting thoughts.

Seems like the safest thing for me to do is keep things as they are by allowing the gents that want to book 1 hour do that & those that want to book 2 hours do that.

I suggest giving the 2 hours guys a incentive since they're just gonna sit there and chat for 90 mins, I've been around for a while now and remember years back, the 30mins slot was very popular and widely offered.
2 hours would in most instances be too long.

When I was serving up brunches, I made it 2+ hours for a while…no regrets.
