I agree to a point, don't ever short a provider. Its bad business, period.
BUT, how many providers will admit that they would do this type of work for less? If the hobbyist was their type will she charge less? If she likes that a hobbyist takes her to dinner and shopping, would she charge less? I doubt it. The price of entry, currently, is what she thinks she can get out off the mark, or what her friends (or WK) tells her she ought to charge.

If the roles were reversed it is hard to say what to charge. Men are dick driven and would do FS for a fraction of what the women would (IMO). Then the price goes higher as the attraction level drops (for some). If she was not good looking she would get charged more. The service doesn't change, the amount of time doesn't change, it is completely subjective as to how price is determined. So instead of a flat rate for time, why isn't there a pricing system based on level of attraction? (I spend too much time at work looking at numbers).
Maybe if the guys are willing to send pictures and a Harmony.com profile, providers would be willing to offer a variable rate...then again, that would ruffle the feathers of quite a few guys here, wouldn't it? Also, if it was common knowledge that she offers a variable rate, how many would go in, thinking they could negotiate? As it is now, it looks like there are guys here who think negotiation can happen via shorting the envelope, I'd hate to see how many guys think they're smart by doing things like that if variable rates and negotiation became part of the norm for this business.
So can someone tell me why is it 200/hr vs 100/hr again?
It's price of entry + what the market will bear +number of other factors.
It's also the market this site represents. There are plenty of girls willing to do it for reasons other than
just money. Then there are girls who are not aware of this market, don't have the means to be in this market, or don't care to be in this market. Rates there are much lower than what you see here...the search is a bit more work though.
