Because people have to sleep at some point. Folks can’t count ballots for 24 hours straight. Just like in EVERY election, they shut down at some point and resume the next day. You generally don’t see that because the results of the election aren’t close enough that the results will change from the election night count. In close elections it’s sometimes days or weeks before the exact totals are determined.
