I'm blown back how much Windstar and Choctaw charge for a room but Choctaw is nicer and more upscale than Windstar...more like Vegas casinos.
Both those casinos are run by tribes and are not regulated by any state gaming commission. I've been informed, by a very good source, that they continuously adjust the machine payouts throughout the day. As to card tables...what the heck is up with the $1 or more ante, for the house, per round? No thanks!
Just go to Vegas. Costs the same or a tiny bit more if you are flying and staying for 1-3 nights. Example on
https://book.aavacations.com/ you can find an economy round trip with 3 night stay at a major casino on the strip for $300+ to however much you want to pay.
If you don't want to go to Vegas, I would give Shreveport or Lake Charles a try over Windstar or Choctaw.
