BBQ

Is anyone here a BBQ expert? Im a bad ass cook, but I can't get the tanginess out of the BBQ sauce.

Online tips say Sugar or tomatoes, but Im a picky bitch and it isn't cutting it.

Instead of sugar.... Simmer (long and slow ) butter and brown sugar in with your sauce......

On labor day I BBQ steaks, slow smoked ribs, made bacon wrapped chicken on sticks, prok chops, chick breasts, grilled some veggies, and ate like a king!! This time of year I BBQ a lot as I will be doing the same thing this Thursday for the kick off of the football season.

I do a lot of smoking...brisket, pork shoulder, pork spare ribs and baby backs. The best sauce I have ever come across is Dreamland's. It is thin compared to store bought sauces. It is not sweet and has a little bite. You could probably use it as a bloody mary mix if you were so inclined. I have tried many sauces, including some of my own creations, and Dreamland's beats them all. IMHO there is no reason to make your own sauce when you can get this sauce on line. Try dreamland.com. Give it a try and let me know what you think. I ordered some Sonny Bryan's about a year ago. Good sauce but a little sweeter.

For pulled pork, I am very partial to a down east North Carolina BBQ sauce. It is not tomato base sauce. It is a cider vinegar based sauce. You mop the pork shoulder, or whole hog, as you are smoking it over hickory wood. (White and Red Oak is good too). Once done, you pull the meat and pour the sauce over the meat. I serve it with some vinegar based cole slaw.

Not many people in Louisiana have ever tried this sauce. It is well worth a try for something different and it is very easy to make.
And for something even more unique is a regional South Carolina BBQ sauce. It is a mustard based sauce. Very good and very different.

If you want some good ideas, along with the great things already said here, look on TV for a show called BBQ Pitmasters....its pretty cool, and they all have their own little twist to how they do things. I've been getting into it lately, just wish I had a place to have a smoker, that would be awesome!!!

kindafun we have a dreamland in mobile,it is awesome but you smell like smoke when you leave,they cook on a open pit inside,but red hot and blue in memphis is awesome,if anyone ever goes to the casinos in miss,you have to go to the SHED world famous bbq and sauce

The Joint in New Orleans has the Carolina vinegar sauce Stick is talking about. And it is GOOD! It's on Poland by the Navy station, across the street from Jack Dempsey's.
I have a BBQ Grill & a smoker. Perhaps we should have the next meet and great at my new place in NOLA. Now theres an idea... Heidi lets work on that!
