For the Tech Savvy. An Audio Converter Recommendation please?

I have a collection of ripped music that spans 60 gigs and is in a variety of different formats.

Yes I actually have the the vast majority of this music still on CD as well.

What I am looking for is software that will read a folder and convert the different file types to .mp3s or whatever single most recognizable format is that can be played on both Apple or Windows without modification.

I don't mind having to pay for it.

It needs to me something that I can give a top Folder to with wildcards that will move down the folder trees and duplicate everything it comes across into one format.

A suggestion of what that format should be would be appreciated.

I have files stored as wav, mp3, wma,... heck... I don't know all of them

12000+ files in 2600 folders
