It would be interesting to know the average age, race, income, etc. of providers and clients. Other interesting stats would be average rate paid by time block, also broken down by demographics. Menu acts broken down by percentage of providers who do each one, etc. The numbers can go on and on. Anything like this exist?

A lot of people make a good living providing answers to questions like these. It's very helpful in evaluating the health of a business, hiring needs, and figuring out how best marketing dollars might be spent.
With regard to some of the specific elements the OP requested, however, I cannot find where any helpful conclusions might be drawn. The whole endeavor would amount to a huge, expensive mess of nothing.
