SO FAR I WILL BE ON BOURBAN BUT WANNA STRAY AWAY FRM THE TOURIST SPOTS ONE DAY...

Here are a few spots I would recommend close to where you will be staying
if you like karaoke the cats is the place to go http://catskaraoke.com/ there is a biker car rite across the street I do not remember the name but there are usually a ton of bikes parked outside
The Dungeon 738 toulouse does not open till midnight but its a kick ass little club most tourist are to scared to go in lol

LOVE the Dungeon! Its the only club that I know of that BLASTS my kind of music and has a pool table!
