Check out Galveston.com - there is a lot of info there on current and upcoming events. They have an evening ArtWalk on Postoffice and adjacent streets about every six weeks (just had one this past Saturday). Artist Boat has kayak adventures regularly. Galveston Island State Park is really nice if you like nature walks and that kind of thing.
