I grew up in Texas but I have now lived in KC for several decades. In my opinion, the BBQ in Texas is more smoky and savory, often served dry and when a sauce is presented, it is usually thinner and spicier. A lot of Texans use mesquite which leaves a strong smoke spice to the meat that is pretty damn good. KC BBQ is good as well, but I find it less smoky and the sauces here are too sweat for my taste. Kind of like all the hot Latina chicks in Texas, I have to give them the nod to Texas on BBQ as well.
