If you are the outdoorsy type, Redrocks amphitheater is a great hike, and very pretty this time of year.
There is a place called the butterfly pavilion near Westminster that is a very nice indoor almost rain forest like space, and of course the wide variety of butterfly.
The 16th Street mall in Denver or the Pearl street mall in Boulder, are both great for shopping, open air market, food, and entertainment.
