My favorite way to make a roast is called a Mississippi Roast and it is SOOO good.
3- pound chuck roast
1- ounce packet of dry ranch seasoning mix
1- ounce packet of dry au jus gravy mix
1/2 stick of butter
1/4 cup water
5-6 pepperoncini peppers

Make it all the time and every single time, completely satisfied.

+1 for Mississippi pot roast. I spill a few extra peppers in the pot though.

Another good one is chopped button mushrooms, high quality instant gravy and beef broth. Take the roast out when done, and hit the pot likker with dijon, either some heavy cream or sour cream and some dill for a nice crock pot stroganoff.

I LOVE LOVE LOVE this topic and of course it's hobby related. Didn't you know that erotic joy is to be found while eating good food?

And more amorous joys can also be found about 6-8 inches lower than the stomach but thank you, to everyone but the above, for the suggestions.

This is the first year that I'm alone for Thanksgiving and I think that I'm going to try cooking a roast beef in a crock pot.

Like today!!!

Again, thanks!

Thanks for the idea and the dish sounds really nice. Took me a bit of time to find those Ranch and au jus powders (in Walmart no less!) because I never buy stuff like that. Plus, had to figure out the peppers but if I don't cook this like NOW, might do it first thing in the morning.

Again ... great topic and thanks for the idea! (Ready to try new things! That's true!)

Happy Thanksgiving. And was I the only one who had never heard of Mississippi roast beef? Did a short bit of research and the recipe is a perennial favorite with a lot of folks!

Take care,
Elisabeth

My take on Mississippi pot roast....

4 lb Pot Roast
1 packet Ranch or spicy ranch dressing powder mix
1 packet Au jus mix
1-2 pats of butt on top
Potatoes
carrots
Mushrooms
Squash
Pepperoncini peppers + juice (1/2) cup
1-2 jalapeno peppers
Cook on low for 8 hours.

I don't use that much butter...it doesn't need it.
Our current weather in DFW makes this a perfect time for a simple dish like this. Here's another variation on the theme:

1 4-5 lb. chuck roast
1 package Good Seasons Zesty Italian Salad Dressing Mix
1 14.5 oz. can of low sodium beef broth (the dry salad dressing mix contains plenty of sodium as do the jarred peppers)

One bottle of dark beer, preferably Shiner Bock

1 16 oz jar of whole Peperoncini peppers

Sliced Provelone Cheese
Good Quality French Bread

Trim excess fat from the edges of the chuck roast and also the larger fat deposits from between the major muscle groups in the roast, leaving the roast in large pieces if possible.

Drain the liquid from the peppers, reserving the spices in the bottle.
Pour the beef broth into a crock pot, add the packages salad dressing mix and stir well to combine.
Place the chuck roast into the crock pot and sprinkle the peppers evenly into the pot.
Pour a little of the beer into the pepper jar and then into the crock pot to harvest the spices from the jar.
Add the rest of the beer to the crock pot, cover, and set to high temperature for 60-90 minutes.

Reduce the temperature to low and cook in the crock pot, covered, for about 7-8 hours
About 30 minutes before you want to eat, take two forks and thoroughly shred the meat (it should fall apart easily) and let it soak in the juices for 30 minutes before serving over a nice slice of the French Bread and a slice or two of Provolone. This size roast will make 12-14 servings and pairs well with a nice full bodied red wine.

While this is cooking spend some quality time with a friend, and more wine.

How do you make the above recipes without a crockpot?
Basically the same just put it in the oven.
Get a roast pan with a lid.
300 degrees for about 3-4 hours or so
