Official SAB Eccie holiday

I was thinking of petitioning to get a day officially recognized on Eccie as SAB Day. My initial thought is to make it the same as another holiday so its easy to remember. I'm just having trouble figuring out which day would be best.

Valentines Day - Who is a better Valentine than SAB?
MLK Day - Fighting for her right to party
Arbor Day - Obvious reasons
Cinco De Mayo - I happen to know she doesn't prefer Miracle Whip

I just can't decide. Any suggestions?
