Texas Barbeque

What is your opinion of Texas Barbeque? I love it. Especially the huge smoked ribs like you get at the County Line. Moist, juicy brisket and pork ribs slow smoked. Please don't put sauce on it, I will do it myself.

During my last road trip we were coming through a small bump in the road in Alabama that had a HUGE barbeque place. Set up for live music in one area, bars, video game area for the kids, total probably in excess of 20,000 square feet. HUGE. One of the signs posted said: "THIS AIN'T TEXAS BARBEQUE". It sure wasn't. SO and I each ordered a large sliced brisket sandwich. It came out covered in sickly sweet sauce and the meat was about as dry as the hill country in Texas. We decided to stick with Texas Barbeque from now on.

My nephew moved to Alabama. Every time he visits, he goes on a Texas BBQ binge because he can't eat the crap in Alabama.

I remember there was a "North Carolina" style BBQ place here in Austin a few years back. The chopped pork was pretty good, but if you didn't stop them, they'd put cole slaw or some other decaying cabbage concoction in the sandwich. They had some nasty home made sauce, as well.

I love a moist brisket, which was cooked hot for a few hours, then slow cooked another 15 or so. It needs to get up hot enough and stay on long enough that the fat melts away into juices.

I thought I would do a quick google and I easily found a website which shows how I was taught to cook a brisket outside Austin. I learned on a pit which cooked about 30 brisket at a time, had a large firebox, and an illegal who would feed it all night long. Here ya go: http://www.amazingribs.com/recipes/b...s_brisket.html.

I'd skimmed it, but it's pretty close to how I learned to cook. The difference is we only sliced the flat muscle and we chopped the point muscle after cleaning out any fat which didn't melt away.

I've gotta say, I drive several times a year to Llano for the sole purpose of going to Coopers BBQ. But now that I've seen the Texas Monthly article, I've decided to try all 50 on the list. Now I just need some kind of template so I can be my own judge of who the top 50 are. :-)

OH Vics on Burleson is close to our location so Jessie Austin and I go there a couple of times a week. the ribs are to die for, but I can't live without the pork loin there. you guys check it out , been there forever and on corner of 71 and Burleson. He won all kinds awards thru the years
Has anyone else tried the smoked prime rib at County Line? I don't think that it is always on the menu. I haven't been for a while but that is truly a meal "TO DIE FOR".
Sorry but have to disagree with you guys. In the deep south, (Georgia, Carolina's, Tennesee, Mississippi), the BBQ dominates. More pork style than beef like here in Texas. I also travel the country and try BBQ all over. The pulled pork sandwiches in the Carolina's are hard to beat. Babyback ribs from Tennessee are like heroin. Try the dry rub ribs from the The Rendezvous in Memphis and you will never eat ribs from anywhere else again. I even have them FedEx them to me here in Tx. Everyone has their idea of what ribs should be. For me its pork over beef.

OK - now you can all call me crazy, its Ok. Just remember that we are talking BBQ on a escort site so.......I guess we are all a little crazy.

Franklin's brisket is delicious, but the lines are crazy since they've been discovered.

Mann's on Research near Peyton Gin is great for northerners.

There's also a Coopers in New Braunfels that is a little closer than Llano that is mighty tasty.
