So I have never been to a Houston area SC, what would you recommend I take here total? Is everyone guaranteed to get some play? Any advice would be great!

only death and taxes are guaranteed, SC are very much YMMV.

Find a good waitress - tip her well - usually helps in pointing out who plays and who doesn't.
Day time, IMO, is better and generally cheaper.
End of/Beginning of month also a good time - rent is due.
