First Time to Costa Rica - Suggestions?

I will be flying to Costa Rica the weekend of Sep 23rd for the first time and I would like to sample the "local cuisine" while I am there.

I have done some research online, but I trust the knowledge of my fellow hobby'ists over fluff pieces written for specific areas.

I may only get one to two sessions in since I will be traveling with the wife and I do not want to leave her for too long on any given night.

Flying in and out of San Jose if that matters.

Update:
The wife has agreed to have us stay in the Hotel Del Rey the last night in San Jose so that I can go play for a couple of hours.

Anything to be aware of or anything that the ladies there are known for that I should be sure to ask for?

I read an article that the Blue Marlin is the best place to go in the hotel to find a lovely lady to party with. True?

Found this little snippet on CostaRicaTicas dot com about where to go if picking a girl up at Hotel Del Rey.

Any experiences with these locations? Any other ideas on where to go or how to proceed since I will not have a room?

Once you finish negotiations, you can take her to a motel (if you have a car) or else Hotel Morazan which is 100 meters way (costs $ 35) or La Oficina short term motel which is about 600 meters away (a room at La Oficina is 7000 colones and you'll have to take a taxi there). Both Morazán and La Oficina are very neat and beautiful places.

Went down to CR for first time this past year. I had a blast. Uber is great there. I'd use Uber from the airport if I were u. "Local Cuisine" is awesome. Still wish I was There. Enjoy!!
Del Rey is a hotel. You can stay there. I think rooms start at $50/night. They do charge to take the girls up to your room. It used to be $10/girl but I'm pretty sure they went up.

There is a place right across the street that rents rooms by the hour.

Hey guys. I'm here in San Jose now. Staying with the wife at a hotel a couple of blocks down from the Del Rey on the main strip. Gonna venture out after taking her to dinner.

Any last minute tips before I venture out tonight?
