I'm trying to make sushi at home. Still working on getting the sushi rice down but am close. I hate the bs sake sold at HEB. Where can you get good sake in S.A.?
Oden...are you using sake in your sushi or are you asking where to find good sake? You can find a good sake at any Sushi restaurant...Godai will sell you a good bottle.
If you're making sushi rice:
You need to get a good sushi rice wine vinegar and cook it with sugar and salt to make the sushi vinegar mix. For 3cups of rice...use about 1/3 cup of rice wine vinegar...3Tbsp sugar...1tsp salt.
Also, make sure you use a good grade long grain japanese rice and slowly mix the rice wine vinegar mixture into the warm rice. Use a wooden rice paddle...slowly cool with a side-to-side motion and then up and down...making sure to not crush the rice. Use the rice at room temperature...not while hot. Also, make sure you don't put the rice in an aluminum bowl...as it will react with the vinegar. Hope this helps.

Central Market at Broadway & Hildebrand used to have a Sake expert. Tall guy named Luther. He hasn't worked there in a while, but he got a few regular customers into sake so they might still order some. I've seen some good choices at Alon Spirits (small liquor store next to the HEB on NW Military) and Spec's on 35. Not sure how well the liquor stores sell sake so I'd ask some freshness related questions before putting out the cash for nicer sake.

Actually was looking for advise on good Sake to drink but will use the advice on making Sushi rice. I really enjoy the whole meal. I think I should look into private lessons.
