Try Fiesta Patio Cafe on Pat Booker rd. The recipes are full of hippy love. Short grain brown rice Mexican style. No one seems to eat there but airmen from nearby Randolph Air force Base and their families. The food is awesome, but don't let anyone know, it's a secret

I enjoy a Mexican place near me called "Taquira Mexicana"
Just one of those local ethnic places off SW Military Drive
and Somerset. Place is usually packed with locals, and even
quite a few not so local folks.
Taco Palenque 1002 ne loop410 Super good and 24hrs http://www.tacopalenque.com/locations.php

There is a little place off of SW Military and Quintanna (sp) called Mendes/z.
I LOVE their Swiss Enchiladas. Off y'alls beaten trail but that dish sticks out.
Just try any hole in the wall place and experiment.

It all depends whether you're talking about interior Mexican, classic Tex-Mex, or more contemporary Tex-Mex.

Interior: Cascabel, on S. St. Mary's St., or Guajillo's on Loop 410 and Blanco, or Cielito Lindo on Stone Oak. La Gloria in the Pearl Brewery serves interior street foods, and it's also a great people watching place.

Classic Tex-Mex: Mexican Manhattan. Brown gravy enchiladas, margaritas and a river view.

Contemporary Tex-Mex: Rosario's or Acenar, Los Barrios (either location), Aldaco's (Stone Oak location is better). All of these places also serve some more Northern Mexican dishes, too.

Oh, and I love Taco Palenque, too.
