Have her pick. If you're wanting to surprise her, ask someone from out there.

Depends very much on the style you, or she like. I’m partial to the casual, modern design of the Aria over the traditional Italianate style of both the Bellagio and the Venetian, or the bland Asian influences transitional modern Wynn. But despite that, I will occasionally stay at the Venetian because I like there restaurants better. But those two — Aria and the Venetian — would be my choice.
Bellagio rooms are so-so, not worth the price of admission. Cesars has my favorite restaurants.

I've stayed in over a dozen hotels in Vegas. I'd recommend the main strip where all the actions is. Based on my personal experience of going there with a girl, I'm gonna recommend the following based on your budget.

$$$$ - Venetian. If you can afford it, then you can afford her a romantic gondola ride. Paris is also a good option with a view of the Eiffel. Top of the tower is a great place to get some touchy feely action while watching fountain show.

$$$ - Planet Hollywood. Get the room with the view of the fountain.

$$ - Bally's. Get a room in the Jubilee towers. It gets you a view of the Eiffel and fountain.

$ - Flamingo. Its old school and not the fanciest. Get a room with a view.

I've stayed at all the hotels on the strip except for the Travel Lodge and a few off strip. If you're going to get a standard room don't expect to be impressed. And you will pay as much for a standard room in some of the more upscale hotels as you can get a suite for in others.

If you want to drop some money, be romantic, and get a nice suite Aria, Cosmo, Belliago, Caesars, Paris, Venetian, or Palazzo. Wynn/Encore are nice but they are kind of off the north end of the strip and the walls are thin. The attached golf course is good but you're probably not going to Vegas to play that kind of hole in one.

Ones I avoid are Luxor, MGM, NYNY, Tropicana, and by all means Excalibur. The MGM is nice but the others have less than impressive rooms and all of these hotels are at the far south end of the strip so you walk a lot. Remember, the strip is 2 miles long. I also avoid Planet Hollywood, the casino is cool but the hotel is old (used to be the Aladdin) and not much value for the buck. Plus the staff always seem to be doing a favor by letting you stay there.

I also avoid Bally's, The Flamingo (although the nature preserve is cool), Harrah's,and Linq. Even though these are around the center of the strip they're ancient and you can smell air left over from the 60's. The Mirage is in a good location and is a cool hotel but you won't like the rooms, even the suites. I like Treasure Island as it's a fun little hotel and the larger suites cost about the same as a regular room at one of the upscale hotels but it's probably not where you wan to go for an impressive romantic trip.

If you don't want to stay on the strip and want to impress go to the Palms.

Mandarin Oriental is also nice. I haven’t seen it mentioned. Four Seasons/Mandalay Bay is also nice if you don’t mind being on the south end of the strip. Of the two, I prefer the Four Seasons. It’s quiter.

Why would you spend a bunch of $$ on a room that, in all honesty, you're going to spend a relatively small amount of time in?

Wynn and Aria are my favorites.
