Have you ever judged a BBQ competition? World wide standard is "ribs that fall off the bone" are disqualified. That kind of junk doesn't fly with REAL barbecue. And yes, I have judged in somewhere around 80-90 different cities. Also Australia and Brazil. I also own a blue ribbon from The American Royal, the top competition in the world.

Its all personal taste. I grew up in Texas but have lived in KC for many decades. Both have their good points, but I still lean towards the Texas Q as my favorite. BTW, not all Texas Q is dry rubbed, a number of places have thinner savory sauce that is outstanding.
