I would like a list of providers who will see Cajuns

All Cajun recipes start with "first, you make a roux". If you can do that, you are a true Cajun.

You know it is. The old country folks had some chicken left over, maybe some sausage and a little turtle meat or squirrel quarters. It all goes into a pot with lots of spices and some rice and a tomato or two if they had some. Jambalaya.

Food history is very interesting.
Roux is the hardest and longest part of any recipe too. I make gumbo camping sometimes, but the Roux is always done ahead of time.... Cajun.... We own 30 acres near basile.... Can't get much more Cajun. I've been called coon ass more than once.
Ah, dont't forget the rice. Gots to have dat rice!!
