Franklin's is good but there is no way it's worth standing in line for. I go to John Mueller Meat Co in East Austin. He's the grandson of Louie Mueller in Taylor. BBQ is sold out of a trailer in the Kellee's Place parking lot. While you're there stop inside Kellee's for a cold one! Great little hole in the wall. Who knows how long it'll be there since the skinny jean wearing hipsters and the yuppie types have taken over just across the street.

Stiles Switch is pretty durn good. But just about any hole in the wall in Texas beats the bejesus out of anything anywhere else.

I've had good BBQ in Memphis, Alabama, KC, Yadda Yadda... Most of it ain't Bill Miller's.

Franklin's brisket is delicious, but the lines are crazy since they've been discovered.

Mann's on Research near Peyton Gin is great for northerners.

Try Milt's in Kyle and let me know what you think. They are damn close to Franklins without the wait. I have a friend who was born and raised in Lockhart and he prefers Milt's over the stuff he was raised on.

Pork shoulder. Hickory or applewood smoked . We cook the wrong animal and we use the wrong wood in Texas. Beef should be grilled, not barbecued. And there IS a difference.

Milt's is legit. Franklin's is the best I have ever eaten FWIW. But I rarely go stand in line.

For me the best wood is morning.

And I am a plus one on the Mesquite being too oily (oak is great if you remove the bark or use heartwood) and beef not being the ideal BBQ meat (chicken and pork--and salmon are meant for smoke)!
I've been all over this country and eaten BBQ everywhere. Carolina grossly overated. They jazz some things up but when it comes to just meat, Texas is the best in North America.

I can make a pretty damned good pulled pork in my freaking crockpot... Good enough to make a Carolina trucker slap his mama. But I've gotta second Austinfunandfit.
