I have always enjoyed Texas Roadhouse and Logan's.

The Maverick near Floresville.
But for Lamb chop, I like Mina and Demis by Lackland. Only place i've had it where it wasn't dried out.

I have tried most of the steakhouses mentioned above -- Ruth's Chris, Bohanan's, Flemings, etc. and have had good steaks at times. But, my favorite is Chama Gaucha. (When in NY I go to Plataforma)

For the price of the steak alone, you get all the variety plus the great salad+ bar. You can try different cuts of steak, veal, pork, ribs as often as you like. If a piece isn't to your liking, you push it aside and call for a different cut. Try that at a traditional steakhouse.

Plus, you must try the caparhinia (sp?). I discovered them in Rio. I now understand why they dance the Samba!

Enjoy!

I've been to all on your list plus a few more and if you have to pick one pick Bohanan's.
