That brings something back to memory: my second job out of the Military - the research department of one of the biggest food guys in the world. It turns out that they actually were measuring the MIYM thing: they also called "mouthfeel", and it was a big deal. They also called some of the items related to mouthfeel the breakpoint when discussing oils and fats - that is the temperature point in the mouth where the food changed to a kinda of liquid and gives it a better mouthfeel.

They actually looked at the temperatures that could change the feeling of having a good eating experience vs not. Kinda like lard vs butter.

Too much for me on the taste side. I has a different job with all this stuff. Changing it all into numbers for statistical analysis to see if we could figure out the best product for the least cost.

Yes girls, I think mouthfeel could be something much better than food.

The one on State has a very good tip dinner but their ribs aren't nearly as good. There was a relatively unknown BBQ place on Parallel near 86st that, oddly, had some of the very best ribs but it is gone. Zarda's in OP isn't bad for ribs.
