Oh Commanders Palace is one of my top 5 fav places in the U.S. I have a signed cookbook from the chief. I was so excited until I actually looked at that cook book and realized it was waaaaay beyond my capabilities. So back to store bought pie crust I go!!! There are some really solid recipes in the book, the gumbo ya ya is a favorite of mine. I always add a bit to each of the recipes except the bread pudding...its perfection.
I was working on assignment in NOLA several years ago & took a chefs class at the New Orleans School of Cooking in my spare time. Its probably my favorite type of cooking to do...the French Acadians really are artists.
