Exactly. Sometimes the flavors complement each other and sometimes they never really fit together no matter how hard the chef(s), the maitre’d, the prep cooks, and the organizers try and help along the flavor to fit in to the menu or align with the owner’s guidelines for the restaurant.

Many times you have to just dump it and start all over again!
