The reason for quoting is well illustrated right here, where there are several responses, so I quote to make it clear what I'm replying to.

I generally try to edit quoted content to only include what is relevant to my response. But sometimes you're in a hurry.

What really hurts my eyes is seeing a wall-of-text comment quoted in a wall-of-text response, which in turn gets quoted in its entirety... etc.

You have to scroll and scroll through endless repetition trying to find the one tidbit of "new" commentary.
