Beef Brisket

What is the cut of beef brisket called
with the fat?
Fatty brisket???
I do not care for lean beef brisket.
I like to eat my brisket like i eat
my steak,
with the fat!
Everytime i try explaining it at a
restaurant they have no clue what i'm talking about.
They all think brisket is all the same.
Isn't there different cuts of it?

Who knows meat? Help me please and thanks

Most places trim the fat. A lot of folks will send it back with fat on the meat, you need to find the small hole in the wall BBQ places for fatty meat. Try Lil Daddy's next time you in Laffy it is just up the street from your spot.
IMO its more than just trimming off the fat. There is still a difference in the cut. Can you tell the difference in the two pictures?

Yes I see what you mean. It may be a cost cutting thing. Top picture looks like more meat.

She is correct,I love brisket and agree that some are better quality.Good question.I want to know also.Smart people aren't afraid to gain knowledge but asking questions.
It's called a deckel. Hard to find in these parts. Sams sometimes carries them. Or go to dorignacs. The joint downtown has good brisket best time to go is around lunch on Saturdays.
And no restaurants around here don't know the difference. The brisket comes from the breast of the cow. It's the very front edge of the meat. I'm originally from the Midwest grew up on a farm. If you want this type of brisket I.M. me I know a place that will ship it to your door.

based on certain cows?
I mean i know it comes
from the breast
but does it depend on how
healthy the cow is as far as
the texture in the cut goes?

the cow like i thought i did.
I just recently learned
of the cut:
Neck steak.
It's very tender.
Seems no part of the cow
gets wasted.

There are 2 parts to a whole brisket, the flat and the point. The flat is what most restaurants serve as it is flat and they get consistent slices out of them. The point is thicker and fattier. Burnt ends are made from the point and if done right, they melt in your mouth like butter. Next time ask them if they have burnt ends or a piece from the point.

BBQ West on Derek Drive just behind Wendy's is the best I have had in Lake Charles. Last time I was there the brisket almost melted in your mouth.

I went back to get it again on another day and it was sooooo lean until it was almost dry.

So, it is good depending on the day.
