Some providers do ask for deposits in advance. As you can see from the responses, choosing to ask for a deposit for advance bookings could cost you some business. Those who do request a deposit do so for their own reasons, and don't mind the loss of business it may cause.
As with everything else in this hobby, deciding how you conduct your business - ask for a deposit or not, rate structure, heavy or light screening, menu items - are best decided based on your comfort level, and what works for you. If your only concern with this gentleman is that he is booking in advance and the possibility that he might NCNS you, then perhaps a little more thorough screening will set your mind at ease so that you don't need to ask for a deposit to ensure that he doesn't NCNS you.
