So I've been asked several times about when I will start offering Greek..... and I think that time is coming soon

Kinda nervous, I've done it once before and didn't enjoy it, but I would like to try, and if I can conquer my fear I'd love to add it to my menu.

Any good tips, or suggestions as far as making it more comfortable would be great, and of course I'll need someone willing to break me in gently.

For a beginner, obviously, start small. Work your way up at your own pace, no one else's. Coming from someone who loves Greek, there's nothing worse than a provider who offers its, and doesn't enjoy it or is in pain for the duration. Its definitely not for everyone, have fun.
