Hotel recommendation in the strip

Any 3+ star hotel on the strip or 2+ star just off strip hotel will do. This is Vegas, no one cares about who you're taking up to your room, esp at the properties that have 1000+ rooms. The places that get more attention from the law abiding types are the Budget Suites and Motel 6 types (where they might charge you $80 for sheets). Anyone that knows the hotels in Vegas will tell you sometimes there's security at the elevators. Easy enough to meet in public and go up together. If discretion is required, easy enough to find the extra key somewhere hidden in the gift shop.

When they do start to care is when you're working the casino floor and pulling guys that are spending money in the machines/tables/bars. Hotel security will hold you and give you a trespass warning if you ever come back (that would really suck if you had a room there).

As a touring provider, the incall will be nice for the locals (and not being on the strip is a plus as it's easier to get in/out via car). There's way more horny guys visiting with their own room and will want outcall (a vast majority of business in Vegas is outcall). The main issue is timing as those horny guys are likely to wait til the last minute and not plan in advance. Being on or close to the strip for outcalls is key with that group. If you can snag the intelligent ones that plan/book in advance and happen to be here at the same time you are, that's great for everyone involved.

And the mods will repeat that you not announce which property you're staying at. While it shouldn't matter, it's unnecessary information to have out there for security/LE.
