Don't kill the fish

I'm having a little rant here.

I go to an upscale restaurant today and order the mahi mahi. Goodness folks, don't cook it so it is as hard as a rock, dried out and salted like bad jerky. This is a fantastic fish if treated right. (Oh, how that thought applies to so many fishes).

Had a Hawaiian monchong at Masraff's last night. It was cooked to perfection.

Most folks do not know how to cook fish.
It's sad thing. It really isn't that hard if you pay attention.

Good thing (if I can find some eccie activity tonight) is that I came home and ate a bunch of oranges. Hah.
I've had decent luck at Masraff's. But folks have a hard time with mahi mahi even there.

The best mahi I had was fresh off the boat...hook, reel, slice, dice, and munch. Nothing better then fresh "fish".

Do-Do's are a decent fish to eat. Easy to catch. Find a Weed Line, free line some live bait, or jig with a Flashy Spoon.

If you really want some tasty fish, try Tripletail, or Tilefish.
^^^^^^ and keep the first dorado in the water on a stringer. It will attract others.
