I offered to pay for lunch but she also wanted me to pay her for her time in eating with me. Ummm, don't think so. If we meet, we like each other, then by all means I'll not only pay for lunch, but pay for activities and even give you a little extra if it's a good session. So, needless to say she refused to meet with me because I wouldn't pay her for her time during lunch.

It would also be a poor business decision for the reasons Traci suggested. Why would she want to meet with you for free in case you became a regular when she is likely to have men lining up at her door without that extra time and effort? You may feel somewhat entitled due to the fact that you consider yourself a gentleman, but what you asked for seems like a show of disrespect. The implications are insulting.
Furthermore, you are the one who is looking for a very special kind of experience. Sometimes cliched lines do the trick, and this is one of those times: Beggars can't be choosers. I don't think people are going to be willing to help you when you had a pretty good opportunity to help yourself.
