Actually that's a really good question. Why is one Legal and the other is an illegal societal taboo ?
1) A Porn Star is paid money to perform various sexual acts with a person by a third party.
2) An Escort is paid to perform various sexual acts with a person by that person.
They both are exchanges of money for sexual services so if I brought a camera and a modeling release form would any exchange of money for sex then become legal (I know it wouldn't but the question seems valid).

Regulation and Taxation allows the porn industry in the USA to exist my friend. They can't get their cut from escorts, and that's why it's illegal!
