Great question. Depends on what you are looking for. In no particular order. Scarlett Pearl (Newest Casino). IP Biloxi. Hard Rock Casino, Beau Rivage. These are my favorites but all have different vibes and feels.

The Hard rock!

Hard Rock is great, but I really like the non-smoking casinos.

Scarlet Pearl. Rooms are nice and pho at Chopstx is excellent

The Beau has excellent buffets and there is this 1 awesome machine I play when I go there and I always hit a lick on it....

G.N. hands down but really I'd take any hotel/casino that you don't have to use a keycard to use the elevator. I hate having to go downstairs to let my "company" up.
