Going to be spending an extended time in Seattle.... what are your "must try" food spots?

I'm a bit of a foodie, so whenever I venture somewhere new, I'm keenly interested in the local food culture. I'm going to be spending 6 weeks in Seattle so I figured--- lets see what is out there!!


While I know this site isn't as busy as TNA-- this is also the site where I'm best established, so I figured I'd check over here for suggestions, etc. on the best options for local cuisine.
