Today is Pi day (3.14) so here's a "Key Lime Pie" Recipe


Ingredients:

(8 ounce) package cream cheese
1 (14 ounce) can sweetened condensed milk
3 egg yolks
1/2 cup nellie & joe famous key west lime juice
1 9-inch graham cracker crust

Directions:

1. Preheat oven to 350 degrees.
2. Beat softened cream cheese until creamy.
3. Add sweetened condensed milk and beat to incorporate.
4. Add egg yolks and beat well.
5. Add lime juice and beat till combined.
6. Pour mixture into pie crust and spread with spatula until evenly distributed.
7. Place on cookie sheet and then into the oven and bake for 10 min.
8. until the filling begins to set.
9. Remove from oven and allow to cool on rack at room temp.
10. Then place in the refrigerator for at least an hour.
11. Two works better.
12. Cut into 8 slices and serve with a generous helping of whipped cream.

I'm not normally a pulled pork guy but OMG it is melt in your mouth delicious. I just scrambled some eggs and had pulled pork, egg and potato taco's.


mmmmmmm I'm in hog heaven.

I'm tired of pie for now though so I have an angel food cake and I'm going to top that with some Milk chocolate icing for desert.
